Paleo Plantain Pancakes

Alliteration!!!! I didn’t try to do that….that’s simply what these are…Paleo Plantain Pancakes. About a month ago I made a version and I wasn’t pleased with the consistency…when I got my hands on some plantains I knew that I wanted to try again. These cakes came out way better! I based them off an idea from Juli at PaleOMG, but since I didn’t have all the ingredients hers called for I made up my own.

Paleo Caramelized Plantain Pancakes with coconut honey drizzle

For the pancakes
  1. 1 plantain- the browner the better, peeled and chopped into 1"cubes
  2. 1 tbsp ghee or coconut oil
  3. dash of coconut sugar
  4. 2 eggs
  5. 1 tablespoon coconut flour
  6. 2 tablespoons full fat coconut milk
  7. 1-2 tablespoons water
  8. 1/2 tsp cinnamon
For the honey drizzle
  1. 1 tsp honey (I used pumpkin spice raw honey)
  2. 1 tablespoon full fat coconut milk
  1. First, caramelize your plantains.
  2. Throw your fat into a saute pan over medium-high heat and add the plantains.
  3. Add the cinnamon and coconut sugar and let caramelize, about 5 minutes.
  4. Place the plantains, eggs, coconut flour, coconut milk and cinnamon into a food processor and blend.
  5. Add water to desired consistency*see notes
  6. Pour batter in 3-4" rounds on a heated non-stick skillet or griddle.
  7. Cook 3-4 minutes per side.
  8. For the glaze, microwave the coconut milk and honey and pour over top!
  9. Enjoy!
  1. *this is because I thought it was a little thick at first. I added about 2 tablespoons
