Smoothies are making a comeback in my life!!!! It’s been awhile, but even though the temperature where I am is still barely creeping into the double digits, I was craving a smoothie for breakfast a couple of days last week.
I am used to placing protein powders in smoothies, and I haven’t really eaten protein powder lately since I really just like to focus on whole foods and get protein from eggs and meat. But I mean there’s nothing to say you can’t have a great smoothie without it!
This smoothie, loosely based on my Paleo Shamrock Shake I made last year (Check it out! Hello March!!!), is thick, creamy, cold and refreshing. It even has some veggies hidden in it! Close your eyes and pretend you’re sipping it on a beach. I swear Spring is around the corner!
1/4 cup coconut milk
3/4 cup water
handful of spinach
2 tablespoons cocoa powder
1/2 tablespoon honey
1/2 tablespoon chia seeds
1/4 of an avocado
9-10 ice cubes
I add 1/4 cup of full fat, canned coconut milk, and then I fill the blender up to the 1 cup line with water. Then I add everything else and blend together! Feel free to add more sweetness to your liking!
It’s totally March people. I had a dream about my students’ ELA test scores the other night. Ugh talk about work stress. March is the WORST month for teachers. No break (poor me, I know) and it’s ALL about test prep. NYS ELA test is April 1st. Last year it was on my birthday, so at least this is an improvement. However it’s earlier in the year so I have less time.
However….basketball, St. Patty’s Day….March does have its good points. I love St. Patrick’s Day…..I pinned these cupcakes two years ago and I am determined to actually make them this year!!!
